As part of a USDA – Higher Education Challenge Grant Project, Prof. Bornhorst has developed teaching and learning material (in collaboration with Prof. R. Paul Singh) for an undergraduate course on food digestion and functional food design.
This videos and notes below have been used as part of a new course at UC Davis in Fall 2022.
